Launched in 2000 as the Welsh Whisky Company, Penderyn became the first whisky to be manufactured in Wales for over a century beginning in 2004. Wisely, Penderyn enlisted the services of the late Dr. Jim Swan to advise and assist with their wood/cask program and distilling techniques. In a career that spanned more than 40 years, Dr. Swan conducted decades of groundbreaking scientific research and helped dozens of distilleries take their first steps towards making whisky. Described as ‘the Einstein of whisky’ and ‘the ultimate whisky troubleshooter’, his roots lay in Scotch, but he shared his expertise and encouragement with distilleries all over the world including: Kilchoman, Clydeside and Annandale in Scotland, Dublin Whiskey Distillery in Ireland, The London Distillery, Cotswold and St George’s in England, Victoria Caledonian in Canada, Amrut in India and many more.

A single cask expression selected specifically for the Canadian market, this ex - Pedro Ximénez cask expertly showcases Penderyn’s flavour profile - meaty and fruit-forward. Bottled at cask strength (59.5% ABV), we suggest a few drops of water to tame this boozy, but delicious, complex whisky.

Nose: Warm honey, figs, raisins and dried apricots. Lurking in the background - hot chocolate.

Palate: Prunes, Demerara rum, raisins and brown sugar with Christmas spices.

Finish: The sweetness lingers with some oaky astringency.
