Established as a grocery business in 1895 in the heart of Scotland’s Speyside region, Gordon & MacPhail has grown to become one of the leading independent single-malt bottlers in the world.
Caol Ila (Pronounced 'cull-eela') is situated on the North Eastern shores of Islay with magnificent views across the Sound of Islay to the spectacular Paps of Jura. As it has ever since the distillery opened its doors in 1846, the pure spring water used in Caol Ila rises from limestone in nearby Loch Nam Ban, and falls towards the sea by the distillery. Caol Ila is lighter in colour than its powerful neighbours but contains distinctive floral and peppery notes which complement the traditional Islay peaty flavour.
Colour: Golden.
Aroma: Distinctive peat smoke aromas layered with sweet cured meats, fine pipe tobacco, and delicate floral notes. A fruity interlude of candied peel and bursts of orange emerge.
Taste: Full-bodied, warming, with nuances of chilli. Flavours of chocolate intertwined with cinnamon baked apple. Vanilla, crème brûlée and soft stewed fruits.
Finish: Lingering bonfire embers and campfire ash evolve into warming white pepper.
