Alberta’s First Single Malt Whisky Distillery
Eau Claire is a handcrafted, small batch producer of an array of spirits, but their true raison d’etre is to produce world class whisky. Alberta is known as one of the best producers of barley and rye in the world, so it is only natural to turn that agricultural gold into fine whiskies. If Alberta's barley is shipped to Scotland to make scotch, why isn't Single Malt made right here - close to the source? Well ... Eau Claire distillery was the first to do something about that.
Batch 005 is a throwback to an earlier Eau Claire expression with the reintroduction of ex-sherry casks. As with other batches the use of ex-bourbon and new European (Hungarian oak) barrels is still apparent but complemented by the increase in the sherry content.
Nose: Notes of cherry and peaches are apparent from the influence of the sherry casks. Red fruit, burnt sugar, graham cracker, dark chocolate
Palate: Nutty, white pepper, biscuit and sweet toffee
Finish: Long warm finish, slight drying tannic effect
