The second in an annual series of limited edition bottlings. Older, bolder and completely undiluted.
Matured in a combination of PX, Oloroso and STR casks, Cask Strength Batch 2 showcases a complexity greater than the sum of its parts.
This expression is a combination of spirit that has aged in refill bourbon barrels, then further matured in Pedro Ximénez casks (60%), Oloroso Sherry barrels(28%), and spirit that has been double matured in American oak and European STR barriques (12%).
Cask Strength Batch Two is non-chill filtered with no added colouring.
Nose: Floral and sweet with caramel apples, marmalade and sticky peach syrup.
Palate: Pleasantly oily mouthfeel with rose petals, wild lavender, jalapeño jelly, sulphur, and Christmas spices on the back palate.
Finish: Spicy and long with black pepper and dried fruit.
