He selected Yoichi, Hokkaido, as the ideal location. Yoichi is an old school distillery, using a proprietary yeast strain, wooden washbacks, direct fired stills and worm tubs. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"MsoNormal\"\u003e\u003cb\u003e\u003cspan lang=\"EN\"\u003eThe Whisky: \u003c\/span\u003e\u003c\/b\u003e\u003cspan lang=\"EN\"\u003eTen years in the barrel turns the Yoichi spirit into something substantial, with compelling layers. It is both lively and restrained as though balanced with thoughtfulness.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eNose:\u003c\/strong\u003e \u003cspan lang=\"EN\"\u003eHints of butter buttery shortbread, yeasty white bread and hint of freshly cut hay.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003ePalate:\u003c\/strong\u003e \u003cspan lang=\"EN\"\u003eUndertones of smoke with a musty, leathery funk. Sweet citrus comes out on the mid-palate.
