Named after a bicycle that J.J. Corry invented. Initially the blenders sourced excellent quality and very rare mature Irish Whiskey and set about classifying each cask into a particular flavour block. Then the principals got to work marrying and blending the various casks to create a classic Irish Whiskey, one bursting with juicy fruit flavours. The Gael currently expresses the house style of whiskey the distillers will continue to make in the coming years, once their own stock is mature.
Nose: Fresh hay, floral blossoms, comb honey, dry spice, oak, a crate of whole lemons, and growing spices.
Palate: Lemon sherbet, clean vanilla, and a peppery grunt resolve flavours of rich barley sugar.
Finish: Hot pepper finish.
