From the Young Masters collection this single cask (ex-fill bourbon hogshead cask #5431) Caol Ila was distilled in 2009 and bottled in 2020. Showcases the crafty side of a major producing distillery - one that does not rely on peat smoke to create a textured, nuanced whisky. Total outturn: 306 bottles.
Nose: A gentle nose of oysters, almond milk, apple, pineapple, pineapple, green melon and toasted malt.
Palate: The palate is citrusy and fresh with sea salt, citrus, almonds and honey, seashells and a bed of lit embers.
Finish: The finish is medium long with a mix of brininess and mild peat. The smokiness is mitigated with fresh fruit ... bosc pear perhaps?
