Waterford distillery is a major new project by the man behind the renaissance of Islay's Bruichladdich Single Malt Whisky. Mark Reynier is embarking on a long journey, a voyage as ambitious as it’s pioneering. The destination is to create not just the most compelling Irish whisky, but the world’s most profound single malt.
WATERFORD: here on the banks of the river Suir, on Ireland’s sunny south-eastern coast, an exceptional state-of-the-art facility originally built by Diageo in 2004 and converted to distilling in 2015. Locally there are the finest quality raw materials: the purest of spring water from renowned ancient wells; a team of passionate distillers that share the vision; and the very best barley in the world.
Barley: Irina barley, grown just outside the historic town of Kilkenny, 50km north of the distillery, on an undulating, well-drained, lowland terroir predominantly derived from limestone, by Phil O’Brien, father of one of our distillery staff, Maura.
Nose: A freshly mown grass. Fresh and floral with a hint of fresh yeast dough. Marzipan, milk chocolate.
Palate: Rich and very chocolaty start. Toffee, fudge, milk chocolate, milk coffee dusted with cinnamon.
Finish: The chocolate notes slowly fade, here and there a bit of spiciness of pepper appears, which is then softened again by cinnamon and coriander.
