The idea for Yellow Rose Whiskey was born on a night among friends. In the years since, our spirits have challenged traditions, won awards and put the city of Houston, Texas on the global whiskey map. Fittingly, our name pays homage to a legendary character known for her bravery and independent nature.
From prep to bottle and every step in between, learn how Yellow Rose Whiskey comes to be.Yellow Rose whiskey starts in Texas soil with Texas grains grown by Texas farmers. Our climate and growing conditions impart unique flavor qualities only found in Houston, TX. Whether it’s corn, rye or barley, we look for the best in our grains, because you can’t get a good end without a good beginning. Hot water cooks the local Texas grains, then enzymes convert the starches into sugars. This results in a pleasantly sweet mash, which highlights the bold flavors of our raw materials. The mash is added to the fermentation tank, along with yeast. The yeast converts the sugar to alcohol. After three or four days, the resulting liquid is about 10% alcoholic and is known as distiller’s beer. Creates the wide range of complex flavors that make Yellow Rose whiskey unique. Our distiller’s beer is heated to the point where the alcohol turns to vapor, but the water remains liquid. The alcohol is then collected in a second container. This process is repeated to produce a “new whiskey.” We utilize our copper pot still and do a double distillation each time. Pure water is added to the “new whiskey,” which is aged in Yellow Rose’s charred oak barrels. Our whiskey ages until it’s good and ready. We age our whiskey based on flavor, not a production deadline. The unique Houston climate cannot be imitated and neither can its impact on our final whiskey fingerprint. When the whiskey is ready, we bottle it by hand at our distillery in Houston. Each label is marked with a batch and bottle number, then labeled by one of our passionate, Yellow Rose whiskey-loving teammates.
True to its name, this one breaks all the traditional bourbon laws. Made from 100% Texas yellow corn and aged in small American oak barrels right here in Houston. The 15-20 degree temperature swings in this part of Texas give our bourbon unique characteristics that can only be achieved here. In fact, our angel share is 15% per year, making our whiskey extremely rare and valuable to us.
Outlaw Bourbon is full-flavored with warm caramel and vanilla overtones. Our traditional pot still helps us produce a true small-batch whiskey. One sip and we think you’ll agree you’ve never had anything like it.
