Once upon a time, an unnamed Tasmanian whisky company encouraged investors to purchase casks of whisky, promising future returns. However, the company faced financial difficulties, with some casks sold but never filled, leading to investor losses.
Along came Peter Bignell, owner of the Belgrove Distillery, who, recognising the investors' plight, purchased the remaining barrels.
The rescued barrels were blended and bottled under the Remnant Whisky Co. label, with the name of this expression, "Fly By Night," reflecting the whisky's chaotic and uncertain origins.
As far as we know, The Remnant 'Fly-by-Night' Tasmanian Single Malt was aged in both first-fill bourbon and Australian Apera casks.
This non-chill-filtered expression is packed full of flavour, and really shows off the strength of the Oceanic whisky category, even when the provenance is in question.

Nose: Aromas of mocha, blood orange and fresh ripe peach with a hint of toasted marshmallow.
Palate: Decadent flavours of dark chocolate orange, meringue and salted caramel.
Finish: Almond croissant and vanilla custard.
