Baldur's Canadian Whisky Release No. 008

Located in Lumsden, Saskatchewan the Last Mountain Distillery is a small-batch craft distillery producing premium whisky and other spirits. Utilizing a majority of prairie-grown grains, they combine traditional distilling methods with modern techniques to create true Western Canadian spirits.

Baldur’s Release No.008 is a bold and expressive single malt, crafted from 100% malted barley and patiently matured for eight years. It begins its journey in a once-used bourbon cask, developing a foundation of soft vanilla, golden toffee, and honeyed malt before being finished in an Islay cask, where it takes on a distinctive coastal character.

Producer's Tasting Notes

Nose: Gentle waves of peat smoke rise alongside notes of caramelized sugar, toasted oak, and a subtle salinity reminiscent of ocean air. 

Palate: Opens with a smooth sweetness - honey, vanilla, and malted biscuit - before evolving into layers of smoky depth, charred wood, and a touch of brine. Hints of dried fruit and baking spice add complexity, while the influence of the Islay cask brings a lingering, earthy smokiness.

Finish: Long and warming, with soft peat smoke, sea salt, and a delicate sweetness that slowly fades, leaving a balanced and memorable impression.
