Broken Barrel Whiskey Co. was founded by Seth Benhaim who originated the concept from experimentation with used barrels (Bourbon, French oak, and sherry casks from Spain). The company actually trademarked the breaking down the barrel staves and inserting them in the whiskey for finishing - calling it the “Oak Bill”.
Mash Bill: 70% Corn, 21% Rye, 9% Malted Barley
Oak Bill: 80% Central Coast Cabernet Staves, 20% New French Oak Staves
Nose: Vanilla, freshly-cut straw and slight oak.
Palate: Vanilla carries through from the nose, red berry sweetness and the spiciness from the rye appears on the back palate.
Finish: Short and spicy. Unusually - not much tannin dryness that one might have expected from the Cabernet casks.
