Using the finest grain in the world, Last Mountain Distillery (LMD) crafts their whisky in small batches. Mashes are 2400 litres and are distilled in a 1200 litre hybrid still - making each expression unique. The Three Wood Rye is a seven-year Rye grain whisky which begins in new oak barrels. It is then transferred to a gently used American White Oak barrel that had previously held another LMD Rye. It finishes the process in a first fill Bourbon barrel. The result is a complex Rye with hints of subtle dill with classic vanilla and honey notes.
Nose: Baled hay, fresh, sanded wood, honey and butterscotch and touch of Carolina tobacco.
Palate: Honey and butterscotch carry through from the nose and are joined by raisins and canned stone fruits in syrup.
Finish: Short finish with a touch of caramel and tobaccos.
