The Distillery: In 1934, Master distiller Masataka Taketsuru sought an environment similar to that of Scotland, where he had learned his craft. He selected Yoichi, Hokkaido, as the ideal location. Yoichi is an old school distillery, using a proprietary yeast strain, wooden washbacks, direct fired stills and worm tubs.
The Whisky: Ten years in the barrel turns the Yoichi spirit into something substantial, with compelling layers. It is both lively and restrained as though balanced with thoughtfulness.
Nose: Hints of butter buttery shortbread, yeasty white bread and hint of freshly cut hay.
Palate: Undertones of smoke with a musty, leathery funk. Sweet citrus comes out on the mid-palate. Some hints of sandalwood on the back palate.
Finish: Medium finish with the smoke dissipating and the citrus coming to the fore.
