In early 1892 work began to convert an 18th-century mansion, Balvenie New House, into a distillery. The Balvenie Distillery took fifteen months to complete, and on 1 May 1893, the first distillation took place on used stills purchased from the Lagavulin distillery. In 1971, Balvenie increased their stills from 4 to 9 (5 wash stills and four spirit stills) during a complete renovation. This may account for Balvenie not having an official distillery bottling until 1973.

DoubleWood 12 was launched in 1993, using a process designed by Malt Master David Stewart in 1982, now commonly known as 'wood finishing'. The whisky that has spent at least 12 years in traditional whisky casks, American Oak ex-bourbon barrels and hogsheads are moved to Spanish oak ex-Oloroso sherry casks for an additional nine months. The whisky is then transferred to large oak vessels called “tuns” for 3-4 months to allow the whiskies from individual casks to “marry” together.  

Nose: Sweet fruit and Oloroso sherry notes, layered with honey and vanilla.

Palate: Smooth and mellow with beautifully combined flavours ~ nutty sweetness, cinnamon spiciness and a delicately proportioned layer of sherry.
