The Distillery: In 1934, Master Distiller Masataka Taketsuru sought an environment similar to Scotland's, where he had learned his craft. He selected Yoichi, Hokkaido, as the ideal location. Yoichi is an old-school distillery that uses a proprietary yeast strain, wooden washbacks, direct-fired stills, and worm tubs.
The Whisky: Ten years in the barrel turns the Yoichi spirit into something substantial, with compelling layers. It is both lively and restrained, as though thoughtfully balanced.
Nose: Hints of buttery shortbread, yeasty white bread and a hint of freshly cut hay.
Palate: Undertones of smoke with a musty, leathery funk. Sweet citrus comes out on the mid-palate. Some hints of sandalwood on the back palate.
Finish: Medium finish with the smoke dissipating and the citrus coming to the fore.
