Kilchoman first released a PX influenced bottling in 2021, a combination of full maturation and finished casks. The 2023 PX Sherry Cask Matured limited edition has been matured for a minimum of five years exclusively in Pedro Ximénez sherry casks previously used by Bodega José y Miguel Martin, Jerez, Spain. Total worldwide outturn: 12,000 bottles.
Nose: Smoke, marine minerals, caramel roasted nuts, candied dried fruit and milk chocolate.
Palate: Fruit cocktail, some iodine and sea saltiness carry through from the nose, sherry funk, honey and characteristic nuttiness.
Finish: Medium length: smokiness lingers, sweet and salty with a slight astringency. Aftertaste of burnt caramel, a bit of fruit, slightly citrus and a nice, refreshing note.
