Unbeknownst to many, Jack Daniel’s whiskeys DO meet the criteria required to be called bourbon. After distillation, Jack Daniel’s Tennessee Whiskey undergoes the ‘Lincoln County Process where the new make spirit is allowed to drip for six days in 10-foot vats. Along the way the spirit passes through maple and applewood charcoal that has been impregnated with 140 proof Jack Daniel’s whiskey. After completing this process the new make spirit is then put in to new charred oak barrels for aging.
By tradition, for the single barrel bottlings, the barrels are pulled from the upper levels of the aging rick-houses.
Nose: Familiar JD aromas with a healthy dose of banana bread, caramel, and heavily toasted oak.
Palate: Caramel, toasted oak, and dried banana chips on the front palate with medium sweet notes hitting the mid and back palate.
Finish: Longer finish. Palate flavours carry through with nothing extra on the back end. Very Jack Daniel's but somewhat pallid.
