FEW spirits is tucked away in an alley located in the Chicago suburb of Evanston, Illinois. The name is taken from the initials of Francis Elizabeth Willard who made Evanston the home of the Woman’s Christian Temperance Union in the miid 1800s.
FEW is a grain-to-glass distillery that began production in 2011, the Straight Bourbon uses a three grain mash that infuses southern sweet corn with spicy northern rye and a touch of malted barley for structure and elegance. The distillate is then aged in small barrels ranging in size from 19 to 113 litres. The barrels are made from Minnesota oak which has a shorter growth season and, therefore, a tighter grain than most other types of oak.
Nose: Classic rich caramel notes but with Cherries and not vanillans. Also a hint of burnt brown sugar
Palate: The youthfulness of the spirit is evident with the powerful grain influence. Sweetness and spiciness both hit the mid-palate hard which is another clue to its age. There are some good flavours lurking but are somewhat overpowered by the grain and the alcohol.
Finish: Short finish with a bit of bitter dryness. This is offset by the spiciness of the oak.
