In 2018, Penelope Bourbon was crafted and created in a classic American tradition – to celebrate an impending birth of a child - lol. Mike Paladini teamed up with his close childhood friend and neighbour, Danny Polise and they set out to discover and produce a Straight Bourbon Whiskey everyone could appreciate and enjoy. Thus the company was born.
The Toasted Series: After full maturation in charred new American oak barrels, Penelope Toasted Series Bourbon is finished in a new, freshly toasted barrel. In this case - #5 Charred Barrel.
Mash Bill: 74% Corn, 21% Rye, 5% Malted Barley
Nose: The heavy toasting brings out vanilla, honey, caramel and citrus.
Palate: When allowed to sit and aerate for a moment or two, this bourbon brings out touches of vanilla, honey, toasted oak and delicious cinnamon notes.
Finish: Medium with the palate flavours lingering.
