When a whisky label says ‘Orkney’ and nothing more, it’s usually produced at Highland Park; however, there’s always a bit of a mystery surrounding its provenance.
What isn’t a secret is that this 14-year-old single malt was distilled in 2011, finished in a 1st-fill Palo Cortado Hogshead (Cask #59), and bottled at true 100 proof (57.1% ABV).
As one of the world's most respected independent bottlers of Scotch whisky, Signatory Vintage centres its philosophy on letting the whisky speak for itself and showcasing the diversity of cask influence and regional character. In addition to being an independent bottler, Signatory also owns the Edradour Distillery.
Nose: Feint smoke and heather honey initially, followed by citrus, golden raisin, polished oak and a whiff of leather and chocolate fudge.
Palate: Silky honeyed malt and spiced orange with richer tones of dried fruit, cocoa, and gentle smoke on the mid-palate. A few drops of water bring out a soft, creamy mouthfeel, with stewed red fruits and Christmas spices that showcase the Palo Cortado cask influence.
Finish: Medium to long, with warm layers of sherry richness, soft peat, dried fruit, and oak spice.
