This is a double-distilled single malt whiskey initially aged in used bourbon barrels for 10 years. It then finishes its ageing in a sherry cask for an additional 6-8 months.
Nose: The nose is lightly herbal, with a predominantly sweet and fruity character. Vine-ripened fruit with a light hint of ash. A bit of solvent on the tongue.
Palate: This dessert in a glass with a hugely authentic note of wonderfully thick Fino sherry. Notes of vanilla, cereal grains, brown sugar, and tart cranberry.
Finish: More of that sherry, with apple tart and cinnamon.
