Waterford Distillery
Located on the banks of the river Suir, on Ireland’s sunny south-eastern coast, it began as exceptional state-of-the-art brewing facility originally built by Diageo in 2004 and converted to distilling in 2015. Locally there are the finest quality raw materials: the purest of spring water from renowned ancient wells; a team of passionate distillers that share the vision; and the very best barley in the world.
ORGANIC GAIA 1.2 - Originally scheduled for release only in the Swedish market, a few cases have made their way to Alberta with a very limited amount to Whisky Drop. Here are the observations from Waterford's distillery group's head distiller: Appearance is a deep copper, with unctuous oils – and legs as slow as mine if I made it to mile 26 of a marathon.
Nose: A rose bed after a summer shower, white pepper, rhubarb tart, salted caramel, popcorn, fudge, marshmallows, cherries, vine tomatoes.
Palate: White pepper, orange zest, almond, dates, lemon sherbet, liquorice, gentle maltiness and warm chocolate brownie.
Finish: Warm spices that gently goes to leave a cherry biscuit note.
